100mL of Water
1 Medium Can of Pineapple Macapuno (Strain off most of the syrup it comes in. Reserve a small amount just to keep the cubes wet)

18.75oz Smith and Cross Jamaican Rum
12.5oz Peach Street Peach Brandy
25oz Peach Black Tea, cooled
31.25oz Lemon Oleo Saccharum
1 Large Block of Ice

GARNISH Lemon Half Moons + Sliced Peaches

METHODOLOGY
Black Tea - steep 5 tsp of peach black tea in a quart of boiling water for 4 minutes. Strain and let cool to room temperature. Do not refridgerate this until it is completely cool or it will turn cloudy.

Lemon Oleo - gather 32oz, by weight of superfine sugarinto large mixing bowl. Peel 32 lemons over the sugar (careful not to remove too much pithy white of the peel. Allow mixture to rest until sugar is saturated with oils from the lemon peels (5-10hrs). Juice the peeled lemons and measure 32oz of tje squeezed juice, add to the sugar mixture, and stir to combine. Let this sit for another half hour before passing through a fine mesh sieve.

470mL Whole Milk
6mL Lemon Juice

PROCEDURE
Combine all ingredients except milk and lemon juice in a cambro. Steep tea in mixture for 1 hr. Strain out tea. In a separate Cambro pour milk. Slowly pour infused mixture into the milk stirring gently. Slowly add lemon juice in 1oz increments, stirring slowly until mixture curdles. Place mixture into centrifuge containers making sure that the final weights of all contents (including covers) are equal. Spin in centrifuge for 15 mins at 3900 rpms. Strain containers through cheese cloth.

*Tepache is a Mexican street-style fermented pineapple beverage - we make ours with a slight variation. At El Grito we serve Tepache on the rocks or as an ingredient in cocktails. To Make Tepache: Using the entire pineapple - boil the skins with canela, star anise and piloncillo. Juice, pulp and the core of the entire pineapple are then added to a jug along with the skins, filtered water, canela, cardamom, ginger, piloncillo, start anise, and one can of Negra Modelo (flavor/yeast) Tepache sits for 10-12 days as it ferments - to flavor Strained off, chilled and ready to serve.

750 ml Lacuesta Rojo Vermut
A few healthy dashes of Angostura

Top with 75 ml of Fever Tree soda on each
serving.

*Calimoxo syrup is basically a basic Spanish table
red wine, sous vide with the ingredients found in
the Coca Cola formula, like citric acid, brown sugar,
vanilla, nutmeg, orange zest, etc, cooked in the bag
for 2 hours at 70° C and then matched volume wise
with Mexican coke, and reduced by half.

Boil 1/3 cup of Tamarind in 1 quart of water then strain
1 quart of juiced sour mango
1/2 quart of juiced papaya
1/2 quart of juiced singo pear
Strain mixture well
1 bottle of Breckenridge

FOR FOAM
1 cup evaporated milk
1 cup coconut milk
1 cup coconut water
1/2 cup of simple syrup or to taste
2 TBSP dried ube powder

Mix vigorously then allow to rest until the ube settles to the bottom. Overnight is ideal. Strain then place in a whip cream dispenser.

2 Qt Ice Cubes for Chill and Dilution

Muddle Arugula, Grapes and Kiwi then shake with Maraschino, Lemon and Ice and double strain into the punchbowl. Add remaining ingredients and mix well reserving the Champagne and Ice for last.

750 ml Hopped Flower Redux*
750 ml Aperol
Cava To Taste

THE HOPPED FLOWER REDUX 
10 ml Violet Extract
10 ml Rose Water
30 ml Beet Juice (color)
18 grams Fresh Magnum Hops
400 grams Sugar
500 ml Pomegrante Juice
Pinch Of Salt

Combine all the ingredients for the Hopped Flower Redux except for the hops in pot and bring to 180°F.
Once temperature has reached 180°, add hops and slowly bring to 212°F. Cool and strain.

6 oz Spiced Coco-Pandan Syrup
12.5 oz Mixed Tea Shrub
50 oz Litchee Noir Tea

GARNISH
Palm Fruit, Young Coconut Meat, Champagne Mango, Longan, Lemongrass (fanned stalks:coated with panda sugar mixture: pandan sugar, coconut powder, light brown sugar, pinch of salt, dipped in cinnamon powder)

THE SPICED COCO-PANDAN SYRUP
Coconut water, panda sugar, whole clove, green cardamom, coriander

THE MIXED TEA SHRUB
Assorted Rare Tea Cellars twice-extracted tea, white-vinegar, sherry vinegar, cane sugar

Add splash hot water (<1 oz) to mixed tea shrub and stir. Stir in coco-pandan syrup. Place ice block in bowl. Mix in bourbon, Royal Combier, and brandy. Add litchee tea to taste. Add ice cubes*. Float garnish.

SINGLE SERVING
2 oz Breckenridge Bourbon
.5 oz Lime Juice
.5 oz Oloroso Sherry
.75 oz "Cola" Syrup*
3 dashes Pecan Bitters**

Combine all ingredients in a mixing tin. Add ice, shake vigorously, and strain into an old-fashioned glass over fresh ice.


PUNCH SIZE
750 mL Breckenridge Bourbon
12 oz Cold Water (or more, to taste)
6 oz Lime Juice
6 oz Oloroso Sherry
9 oz "Cola" Syrup*
36 dashes Pecan Bitters**

Combine all ingredients in a punch bowl over a large block of ice.  Ingredients should be added a little at a time and adjusted to taste.  Stir and serve.  

*Cola syrup recipe:  In a medium saucepan over medium heat, combine the following ingredients:  3 cups cold water, 2 cups organic cane sugar, 1/2 tsp fresh grated cinnamon, 1/2 tsp fresh grated nutmeg, 2 Tbs fresh minced ginger, 1/3 split vanilla bean pod, 4 pieces (segments) star anise, and the peels of 2 organic oranges, 2 lemons & 2 limes.  Bring to a simmer, reduce heat to medium-low, and stir regularly for 25 minutes.  Remove from heat and allow to cool.  Store in an airtight container in the fridge for up to two weeks.

**Pecan bitters:  In a dry, small frying pan over medium heat, toast 1/2 pound pecans and one cinnamon stick, stirring/tossing constantly so as not to burn ingredients.  Toast for 3-5 minutes, until nuts begin to brown.  Allow to cool, then transfer to a nonreactive, sealable container.  Cover with 12 oz bourbon and 12 ounces brown rum.  Remove cinnamon stick after 24 hours.  Strain liquid off of pecans after an additional 72 hours.  Stir in 8 oz brown sugar.  Store in an airtight container in a cool dark place, up to 6 months.

PORCINE PICK-ME-UP PUNCH
MARIA POLISE OF ELA, PHILADELPHIA

INGRIEDIENTS
1 250 ml bottle of Breckinridge Bourbon
1 250 ml bottle of Dolin Rouge Vermouth
2 250 ml bottles of Marquis de la Tour Champagne
3 cups house made oleo Saccharum and tea
9 orange peels averaged in 3 c turbinado sugar until oily ( approx 3 hrs.). Mix with 3 cups Lapsang Souchong tea until dilute, strain. 3 cups of this solution. 
6-8 oz Lemon Hart 151 infused for 49 hrs with 4 cinnamon sticks, 20 broken allspice berries and 30 cloves. 
1/2 an oz or to taste of citric acid in solution with water. Approximately 1:1

DIRECTIONS
Diluted and cool with a large sculpture grade ice cube. Garnish with orange, orange blossoms, and cloves.
